If you have read my Cookie Dough Pop recipe post, then you will know that I have recently downloaded the Hippie Lane app and have been enjoying their recipes.

If you want to try them out for yourself, then here’s what you will need to do:

Biscuits

3/4 cup (90g) pecans
1 cup (150g) medjool dates
Pinch of salt
1 tsp pure vanilla extract
3 tbsp cacao powder

Filling

1 cup cashews (150g) soaked for 2+ hours
1 tbsp coconut oil
1 tbsp maple syrup
1 tsp vanilla extract

Instructions

Process the biscuit ingredients in a food processor until it reaches a dough-like consistency.
Roll mixture into a large ball and flatten on a cutting board with a rolling pin.
Cut in circle shapes with cookie cutter and refrigerate until firm. You can freeze to speed up this process.
Drain cashews and blitz the filling ingredients in the food processor. Mixture should be creamy and smooth.
Spread filling onto chilled cookies and sandwich together.
Store cookies in the fridge.

This recipe is enough to make 9 raweos.

These are so soft in texture with the filling being more coconut-y than tasting like vanilla, so maybe not completely an oreo, but it is certainly tasty none the less.
I was however just slightly disappointed that the recipe only allowed me to make 9 raweos bearing in mind that some where thinner towards the end of the batch to allow me to make more. So potentially this can only make 5 good sized rawoes, and whilst it says on the app the recipe serves 4-6, that to me is not even 2 servings!
